We raise St. Croix Sheep. These are hair sheep that produce exceptionally mild tasting lean meat with a very fine grain. They are smaller animals, so shares are a bit smaller than you might expect with a different breed. Cuts can include a combination of chops, ribs, roasts, legs (bone-in and boneless), shank, and ground lamb. Sheep are butchered locally at Weimer Meats in New Alexandria PA.
